chicken corn soup in the slow cooker

Cobbled together from a few different sources. Don’t forget that it needs to cook for at least another half hour to thicken after adding the milk in the second-to-last step.

  • 1 package turkey bacon
  • Lots of chopped carrots, celery & onion
  • 1 can creamed corn
  • 1 can corn or a cup or two of frozen corn
  • 1 can white beans, drained & rinsed
  • 3 cups cubed potatoes (yellow or sweet or a combination)
  • 4 cups chicken broth
  • 1 package boneless, skinless chicken thighs (can be fresh or frozen)
  • Big shake of dried thyme
  • Salt & pepper
  • 1.5 c whole milk
  • 2 Tcornstarch

Heat the IP to sauté and cut the bacon into little pieces with kitchen scissors.

While it cooks, chop the mirepoix and throw it into the pot.

Once everything is soft, add the chicken, corn, beans, thyme & broth. Cook everything on low for 6-8 hours.

When you return, heat the milk slightly and whisk in the 2T cornstarch.

Add it to the slow cooker, stir, and cook for another 30-60 minutes. Taste for salt & pepper and serve.
