watermelon snow cups
So sorry, neglected food blog! If it makes it feel better, my kitchen is also neglected -- I I literally haven't cooked anything for a month, but that is going to change this week. And I brought a whole watermelon back from the beach and need to find a way to use it, so here are snow cups (courtesy of watermelon.org, the National Watermelon Promotion Board, which is kind of funny).
Watermelon Snow Cups
4 cups cubed, seeded watermelon
6-ounce can frozen fruit punch concentrate, thawed
2 cups lemon-lime soda
Place watermelon cubes in a blender and blend until a smooth puree. Pour into empty ice cream pail; add concentrate and soda. Stir until well-blended. Freeze for about 2 hours and stir vigorously. Continue to freeze until slush consistency. Serve in paper cups.
