Mocha-Almond Latte Freeze

One of the three new recipes I'll be trying this week. I've been looking for a frozen coffee drink for a while so I don't have to visit the evil coffee empire that sucks all your money. Now that I can make tasty scones and a frozen coffee drink, hopefully I can save some money.
In the edition where this recipe is, they talked about how coffee is actually good for you -- caffeine can help improve memory, can increase alertness and improve performance, may lower type 2 diabetes, and has good antioxidants.

Any coffee will work for this beverage, but a darker French roast coffee has a rich, strong flavor that pairs nicely with chocolate. The recipe makes more double-strength coffee than you need; freeze leftover coffee in ice cube trays for iced coffee drinks. Once frozen, coffee cubes can be stored in zip-top plastic bags for up to three months.
3 cups water
1 cup freshly ground French roast coffee
1/4 cup fat-free milk
1/4 cup ice cubes
1 teaspoon unsweetened cocoa
1/2 cup vanilla low-fat frozen yogurt
1/2 teaspoon grated semisweet chocolate
1 tablespoon canned refrigerated light whipped cream (such as Reddi-wip)
1/2 teaspoon chocolate syrup
1 teaspoon sliced almonds, toasted
Brew water and coffee in a coffee maker according to manufacturer's directions. Cover and chill. Reserve 1/4 cup chilled coffee (reserve remaining coffee for another use).Place 1/4 cup chilled coffee, milk, ice cubes, and cocoa in a blender; process until smooth. Add yogurt and grated chocolate; process until smooth. Pour mixture into a tall glass; top with whipped cream. Drizzle with chocolate syrup, and sprinkle with almonds. Serve immediately.

Yield: 1 serving (serving size: about 1 1/4 cups)

Well, close enough anyway. The Pine Club is probably Dayton's most famous restaraunt--not that Dayton is some culinary mecca or anything. This dressing is traditionally served on an iceberg lettuce salad with grated carrot (boring). Pesto Tortellini Salad

Why don't we just re-name the blog "Recipes Kelly Stole from Isaac's" because I seem to have no other recipes amongst my repertoire. Sheesh. Again, this is not really a recipe, but this salad was, and still is, one of the biggest sellers at the restaurant. As with all of Isaac's recipes, I've drastically reduced the quantity from the original (5 lbs. of tortellini, anyone?) 1.5 lbs tri-colored cheese-filled tortellini (or regular white ones, whatever), cooked according to pkg directions and gently rinsed with cold water 1.5 medium-ish tomatoes, diced 1/2 medium-size red onion, diced 1/3 C black olives (do yourself a favor and get some decent olives) 2/3 C or so pesto (I did a mix of basil pesto and arugula pesto) Dump all ingredients into a bowl and stir until everything is well-coated by the pesto. Apple Cranberry Stuffed Pork Roast Recipe
